Adorable Kelly Of Mine

This video was captured during our lunch at Chinese place before we watch the Chipmunks movie. Kelly is always love being in the camera for fun, she always know what to do and how to entertain people that might be watching here hahahhahaha. She's a pretty silly kind of woman, anyway, I hope that you all have a great time, and enjoy the video above my lovely daughter Kelly.

Seven-Fruit Salad

I am looking for something that I can make for dessert tonight. I something something that is quick and easy, found this recipe from yahoo and I thought I'd share this to you all. I know there are other people who are looking for quick and easy recipe and here it is. I hope you all enjoy it, take care everyone and you all have a great time.

1/2 cup lime juice
1/2 cup water
1/2 cup sugar
2 medium nectarines, thinly sliced
1 large firm banana, thinly sliced
1 pint blueberries
1 pint fresh strawberries, sliced
1 1/2 cups watermelon balls
1 cup green grapes
1 kiwifruit, peeled and chopped

In a bowl, combine the lime juice, water and sugar; stir until sugar is dissolved. Add nectarines and banana; toss to coat. In a 2-1/2-qt. glass bowl, combine the remaining fruits. Add nectarine mixture; stir gently. Cover and refrigerate for 1 hour. Serve with a slotted spoon.
Yield: 8 servings

How's Everyone Doing This Monday?

I hope that you all are having a great time while doing all the works. For me here same as usual still alive and working hard, since I am preparing for my move going back to IL. Yeah I am hoping to move by the end of the next month or on May since my lease on my apartment will due this coming April. Today it was ok for me, but I have to do a lot of work and preparing some money for my rent which is due tomorrow. Yeah thankfully I have some money that I need for tomorrow, I am hoping also to get this new job that I applied. Well will see what's the result since I just gave them back my application. Today is a very beautiful day here in Michigan, it's sunny and just perfect not too cold. How's everyone doing today? I hope that you are having fun with this beautiful weather. I hope that this is the start of spring now. Yeah I want spring now I'm tired of snow and the cold weather. Having Fun With Her Bike

Recipe Of The Day

Today I would like to share this nice Recipe to all which you know I found from yahoo. I love searching for different recipes because it's fun to cook food that you haven't tried before. Anyway I hope that you enjoy this recipe and you all have a wonderful day.

Fiesta Shrimp Tacos with Cucumber Salsa

1. Ingredients

1 1/2 cups nonfat sour cream
1/2 cup chopped seeded peeled cucumber
1 (1.25 ounce) package Old El Paso(R) Taco Seasoning Mix
2 avocados, peeled, pitted and coarsely chopped
1 tablespoon lime juice
1 pound shelled deveined uncooked medium shrimp
1 (4.6 ounce) package Old El Paso(R) Taco Shells
1 tablespoon olive oil
1 cup Old El Paso(R) Thick 'n Chunky Salsa
1/2 cup chopped fresh cilantro

2. Cooking Directions

Heat oven to 375 degrees F. In medium bowl, combine sour cream, cucumber and 2 tablespoons of the taco seasoning mix; mix well. In small bowl, combine avocados and lime juice; toss to coat. Set aside.

In another medium bowl, combine shrimp and remaining taco seasoning mix; toss to coat.

Heat taco shells at 375 degrees F as directed on package.

Meanwhile, heat oil in large skillet over medium-high heat until hot. Add shrimp; cook 3 to 5 minutes or until shrimp turn pink, stirring frequently.

Spoon shrimp into warm taco shells. Top each with sour cream mixture, avocados, salsa and cilantro.

Yield: 12 servings

Good Morning Everyone

Another day has come, yeah I am getting ready to go to work. How I wish it's Friday today because I love to just rest and spend time with my daughter Kelly. It's about 7:09 in the morning here and I have leave in a couple minutes before I get late to work. Right now it's pretty nasty weather here since we have some rain. Well it's better actually than having to deal with the snow. So how's everyone doing this morning? I hope that you all have a great time and ready for you fun work. She's Silly Sometimes

Sometimes she can be so silly and loves to play with the camera, whatever she could think of she wants to have a picture of it. Kelly is just a fun loving child and can definitely make you laugh during your sad days. She have lots of energy and can entertain you till` night, she will do some funny jokes or say something to you that will make you laugh so bad. This was taken yesterday and I thought she looks so adorable. Anyway, take care everyone and have fun with the cold weather.

Riding The Her Bike On Cold Day

She always love and wants to ride her bike, so yesterday Kelly went outside and start riding her pink bike. Yeah pink is her favorite, it matches with her coat actaully which is nice. It was cold but not freezing cold so it's fine to be out. She hurt her self a little though while riding it, I think this scratched her hand somewhere. But she is ok now, anyway that's all I can say right now. Take care.

Fun In The Car With Adorable Kelly

Chicken Tenders with Cucumber Salad and Chickpea Couscous

Recipe of the day, I just can't stop searching for some recipes. Found this on yahoo again and it's really good, though there's no picture was provided but with the ingredients. I won't try this yet this time but one day hehehhehe. Anyway, just want to share what I found, have fun.

1 (1 pound) seedless cucumber
1/2 cup whole flat-leaf parsley leaves
1 tablespoon white-wine vinegar
1 tablespoon olive oil
Coarse salt and ground pepper
1 (15.5 ounce) can chickpeas, drained and rinsed
1/3 cup raisins
1 teaspoon olive oil
1/2 cup couscous
1 teaspoon ground ginger
1 teaspoon ground coriander
1 1/2 pounds chicken tenders
2 tablespoons olive oil, divided


Make salad: Quarter cucumber lengthwise; slice quarters 3/4 inch thick diagonally. In a medium bowl, combine cucumber, parsley, vinegar, and 1 tablespoon oil. Season with salt and pepper; toss to coat. Set aside.

Make couscous: In a small saucepan, combine chickpeas, raisins, 1 teaspoon oil, 1 cup water, 1/2 teaspoon coarse salt, and 1/4 teaspoon ground pepper; bring to a boil. Stir in couscous, and cover pot; remove from heat. Set aside (at least 5 minutes) while cooking chicken. Fluff couscous gently with a fork before serving.

Make chicken: In a medium bowl, combine ginger, coriander, 1/2 teaspoon coarse salt, and 1/4 teaspoon ground pepper. Add chicken and toss to coat.

Cook chicken in two batches: Heat 1 tablespoon oil in a large skillet over medium-high; add half the chicken, and cook until browned, 2 to 3 minutes per side. Transfer to a plate; add remaining tablespoon oil to skillet, and repeat with remaining chicken. Serve with cucumber salad and couscous.
Yield: 4 servings

Ginger-Sesame Chicken with Bok Choy and Mushrooms

I love cooking so much and trying different kind of recipes is fun thing to do. Today I have this another recipe to share to all of you which I found from yahoo again. I hope you enjoy the recipe below, enjoy everyone and you all have a wonderful time.

1/2 cup chicken stock or canned low-sodium broth
3 tablespoons low-sodium soy sauce
1 tablespoon sherry
1 tablespoon sugar
1 teaspoon cornstarch dissolved in
1 tablespoon water
1/2 teaspoon unseasoned rice vinegar
1/2 cup Asian sesame oil
1/2 teaspoon crushed red pepper
3 tablespoons canola oil
3/4 pound oyster mushrooms, thickly sliced
3/4 pound skinless, boneless chicken breast halves, cut into 1-inch pieces
Salt and freshly ground pepper
3/4 pound bok choy, thickly sliced crosswise
1 small red bell pepper, cut into 3/4 inch pieces
2 tablespoons finely chopped fresh ginger
1 garlic clove, minced


In a medium jar, combine the chicken stock with the soy sauce, sherry, sugar, dissolved cornstarch, rice vinegar, sesame oil and crushed red pepper and shake well.

In a large nonstick skillet, heat 2 teaspoons of the canola oil until shimmering. Add the oyster mushrooms and cook over high heat, stirring occasionally, until browned and tender, about 6 minutes. Transfer the mushrooms to a large plate.

Add another 2 teaspoons of canola oil to the skillet. Season the chicken breast pieces generously with salt and pepper, add them to the skillet and cook over high heat, stirring occasionally, until they are golden and just barely cooked through, about 4 minutes. Transfer the chicken pieces to the plate with the oyster mushrooms.

Add 1 tablespoon of canola oil to the skillet along with the bok choy and red pepper and cook over high heat, stirring occasionally, until crisp-tender, about 3 minutes. Transfer the vegetables to the plate.

Add the remaining 2 teaspoons of canola oil to the skillet along with the ginger and garlic and cook, stirring, just until fragrant, about 1 minute. Return the chicken and vegetables to the skillet. Shake the sauce and add it to the skillet. Bring to a boil and simmer, stirring, until slightly thickened, about 1 minute. Transfer the chicken and vegetables to a bowl and serve.

Sweet-and-Sour Chicken Thighs with Carrots


8 small chicken thighs with skin and bone, trimmed of excess fat
2 teaspoons salt
1 1/4 teaspoons paprika
3/4 teaspoon cinnamon
1/2 teaspoon black pepper
1 1/2 tablespoons olive oil
1 large onion, halved lengthwise, then cut lengthwise into 1/4-inch-wide strips
1 pound carrots, cut diagonally into 1-inch pieces
2 tablespoons minced garlic
1/2 cup water
1/4 cup fresh lemon juice
2 tablespoons mild honey
1 tablespoon finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh cilantro


Procedure:

Pat chicken dry. Stir together 1 1/2 teaspoons salt with paprika, cinnamon, and pepper and rub onto chicken.

Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then brown chicken in 2 batches, turning over once, about 10 minutes per batch. Transfer chicken as browned to a plate.

Discard all but 3 tablespoons fat from skillet, then add onion and carrots. Sprinkle with remaining 1/2 teaspoon salt and pepper to taste and cook over moderate heat, stirring occasionally, until onion is softened and beginning to brown, 8 to 10 minutes. Add garlic and cook, stirring occasionally, 1 minute.

Return chicken, skin sides up, to skillet, nestling it into vegetables. Stir together water, lemon juice, and honey until blended and add to skillet, then cook over moderately low heat, covered, until chicken is cooked through and carrots are tender, 25 to 30 minutes. If necessary, skim fat from sauce, then add salt to taste. Sprinkle with herbs just before serving.

This weekend was pretty nice.I got a chance to rest something i haven't been able to do. Me and my daughter and my friend had lunch and went to the movies. Not to exciting but any time spent with the ones you love is always nice.
